One striking characteristic of Gelidium is that it must be wild-harvested rather than farmed. Unlike Gracilaria for culinary agar production, Gelidium grows slowly and thrives only in cold, turbulent waters over rocky seabeds, conditions nearly impossible to replicate in aquaculture.
